The Chisel’s purpose is to consistently distribute coffee grinds in the basket. - An evenly-dense coffee puck is going to help you acheive evenly extracted espresso. There are many factors for the barista to consider, achieving this goal. Distribution of coffee grinds in the basket, is one of these important factors. There are also many methods available for the barista to use to acheive even distribution. However, in a real-time café environment, there are many more variables contributing to inconsistent preparation. Therefore, Chisel is a tool to help control this.
How is this different to other distribution methods?
1. Consistency Consider: a café with four different baristas on bar throughout the day, all have different experience, different technique, different heights, skills, knowledge… list goes on… Even an individual barista can distribute many different ways throughout the day, given the simple fact we are human. Result: Using a re-distribution tool means consistent distribution, helping acheive more evenly extracted espresso throughout service.
2. Education - teaching good habits Do you remember a time where you would spray grinds in to your basket and tamp them with your entire mite? Our knowledge has come a long way with the do's and don't's of coffee preparation, so having a tool in place to help educate the importance of distribution of grinds is something we want the industry to have going forward.
Re-Distribution. Meaning, check your initial distribution! The most important thing that many users discount is the way in which the coffee is delivered into the basket. For example, if your grinder is delivering the grinds into one corner of the basket, the density in that area will increase and adversely the density in the other areas of the basket will decrease. Attention must be paid to the way the coffee falls into the basket and must be cared for and coaxed into an even delivery where possible, regardless if a re-distribution tool is being used or not. A distribution-tool will not give you an evenly-dense puck of coffee if you are not considering initial distribution.
